Cinnamon Vanilla Chia Pudding

Ingredients:


  • 1 and 1/2 cups almond milk

  • 1/4 cup chia seeds

  • 2 tsp cinnamon

  • 1 tbsp maple syrup

  • 2 scoops cinnamon cookie protein: I used Nakend Harvest's one! Use code GENE for 15% off!

  • 1 tsp vanilla extract



How to make:

  1. In a bowl, combine chia seeds, cinnamon, and protein powder. Pour in almond milk, maple syrup and vanilla extract. Whisk to combine.

  2. Let sit for 5 minutes and then whisk again to remove any clumps.

  3. Cover and place in fridge for 1 hour to set (the longer you wait, the thicker it will become)

  4. Remove chia pudding from fridge and whisk again. Pour into cups as desired and top with your favourite fresh fruit, coconut yoghurt and granola.

Tips:

  • Chia pudding will keep in fridge for up to 3 days

  • I like to make my chia pudding and then let it sit overnight for a thicker consistency.

  • If your chia pudding comes out thicker than you would like, add tbsp of almond milk until you achieve your desired consistency.
