DF White Choc & Biscoff Blondies

Ingredients:

  • 2 cups almond flour

  • 1/2 cup + 2 tbsp nativia: Can use coconut or brown sugar, however, the colour of the blondies will change slightly

  • 1/2 cup melted vegan butter

  • 2 eggs

  • 1 tsp baking powder

  • 1 + 1/2 tsp vanilla extract

  • 1/2 tsp salt

  • 3 tbsp biscoff spread: Melted

  • 8 biscoff cookies: Half crushed and the remaining half

  • 1/2 cup vegan white choc chips



How to make:

  1. Preheat oven to 180 degrees celsius. Line a 9x13inch baking pan with baking paper.

  2. In a medium bowl, whisk together melted butter, nativia, eggs, and vanilla until fully combined.

  3. In a separate bowl, whisk almond flour, salt and baking powder well.

  4. Stir the dry ingredients into wet until just combined (try not to over stir) and then fold in white chocolate chips and crushed biscoff cookies.

  5. Pour into the baking pan and dollop the melted biscoff spread on top. Using a knife or skewer, swirl the biscoff through batter (ensuring not to swirl too much)

  6. Add the intact biscoff cookies on top.

  7. Bake for 18-22 minutes. The top will just be starting to turn a very light brown. Allow to cool completely (approx 10 minutes) and enjoy!
