GF Crumbed Salmon

Ingredients:

  • 1 cup GF flour: If you’re not gluten-free then you can use any flour!

  • 2 eggs

  • 1 cup Teff Flakes: I got mine in this month’s Goodness Me Box. Use code GENE10 for a discount!

  • 2 tbsp coriander: Chopped

  • 2 tsp garlic powder

  • 2 tsp Italian herbs

  • Salt and pepper: Dependant on your taste

  • 2 fillets of salmon: I ended up being able to coat 4 prices of salmon, but they were quite small.

  • 2 tbsp olive oil: To fry the salmon

How to make:

  1. Dab the salmon on some paper towel to ensure they’re nice and dry.

  2. Using a small bowl and fork, whisk the eggs.

  3. Using 2 plates pour the flour onto one and the crumbs onto the other.

  4. Mix the coriander, Italian herbs, garlic powder and salt and pepper in with the flour.

  5. Heat up the oil in a pan until it's boiling and set up another plate with a paper towel.

  6. Coat the salmon in the flour mixture, then the eggs and then the crumbs. Repeat this with the remaining salmon.

  7. Put the salmon in the pan and fry for about 2 minutes each side or until cooked through.

  8. Once fried, place onto the paper towel to soak up extra oil.



Tips:

  • Make sure the salmon is all the way cooked through by just cutting a bit and checking it is a light pink colour

  • Plate with some sweet potato chips and siracha mayo - it's delish!
