For the cake:
3/4 cup GF flour
2 tsp baking powder
1/2 cup coconut sugar: Stevia or erythritol would work fine too!
150g vegan butter: Nuttelex would work too.
2 eggs: Substitute with flax egg to make it vegan!
1 and 1/4 cup nut milk: I used almond milk.
For the glaze:
90g vegan butter
2 tbsp coconut sugar
1/2 tsp cinnamon
1 apple: Peeled and sliced thinly.
How to make:
Preheat your oven to 180 degrees Celsius and line a cake tin (or grease) and set aside.
Using a small bowl, soften the butter for the cake, but do not melt it.
With an electric mixer, gradually work in sugar until it is pale and fluffy.
In a seperate bowl, beat the two eggs.
Add the lightly beaten eggs gradually into the creamed mixture - beating well.
Sieve dry ingredients and add in the milk slowly, until a soft dropping consistency appears.
Melt the butter for the glaze and pour into the cake tin first.
Mix brown sugar and cinnamon and sprinkle evenly over the base of the cake tin.
Cover with the sliced apple.
Por cake batter over the apple and bake for 35-50mins, or until a cake skewer comes out clean.
Insert cake tin upside down on cooling rack and leave for 5 mins - this allows the glaze to soak into the cake.
Remove cake tin, and allow to cool for a further 5 mins. Enjoy!
Make sure it has cooled completely before serving!
It tastes absolutely amazing with vegan vanilla ice cream or coconut yoghurt.
