1 cup melted vegan butter: I used Nuttelex and it worked well!
1 cup coconut sugar
2 tsp vanilla essence
1/2 tsp salt
2 tsp baking powder
2 cups buckwheat flour: Or any flour you prefer!
1/2 block chopped vegan choc almond chocolate: I used Loving Earth's Almond Crunch one from this month's Goodness Me Box. Use the code 'GENE10' for money off your box!
How to make:
Preheat oven to 180 degrees celsius and line a brownie tin with baking paper. Set aside.
Combine melted butter and sugar in a medium bowl.
Add in the eggs and vanilla and mix well.
Add in the baking powder, salt and flour. Mix well until there are no lumps.
Stir in your chopped chocolate.
Pour the batter into the prepared brownie tin and bake for 18 - 20 minutes, or until slightly golden brown.
Once finished, allow to cool completely before slicing and enjoy!
These can stay in the fridge for up to a week!
I do not recommend to freeze.
