4 salmon fillets: Skin on and off will work
1/4 cup GF soy sauce: Tamari sauce or coconut aminos will also work.
1/4 cup organic honey
1/4 cup dijon mustard
2 tsp minced garlic
2 tsp ground ginger
1/4 tsp smoked paprika: Or chilli powder
Salt and pepper to taste
How to make:
Preheat oven to 200 degrees celsius fan-forced and line a baking dish with a strip of foil at the bottom and baking paper on top.
In a small bowl, whisk together all your ingredients.
Put your four fillets of salmon into the dish skin down (if using skin on) and pour the sauce on, ensuring to get every part of the salmon covered. I used a little brush to help with this.
Bake in the oven for 6 minutes or until slightly pink on top. Brush the salmon with the sauce that's surrounding ensuring to get all of it again.
Bake for a further 4 - 12 minutes depending on your desired cooked salmon. I ended up doing around 10 minutes for a soft pink on the inside.
Serve and enjoy immediately! It tastes delish on a bed of roast veggies and couscous or with some garlic roast potatoes.
