1 cup grated zucchini
1 cup grated carrot
2 cups GF flour: Or any flour you prefer
1 tsp baking powder
1/2 tsp baking soda
1 tsp rosemary
2 tbsp natural bone broth: I used Gevity Rx's one! Use code GENE10 for a discount!
1/2 tsp salt
1 cup vegan cheese
3/4 cup almond milk: Or any nut milk
2 tbsp pepitas: This is optional
How to make:
Preheat oven to 180 degrees celsius and spray a muffin tin with coconut oil or olive oil.
Grate zucchini and carrots and squeeze out excess water. (I do this by placing the grated zucchini and carrot in a chux cloth or paper towel and squeezing out the liquid).
In a large bowl, add the flour, baking powder, baking soda, rosemary and salt and mix together. Add all of the remaining ingredients and mix well.
Using a tablespoon, scoop the batter into the muffin tin, filling each muffin cup 3/4 full. Sprinkle a few pepitas on top of each muffin.
Bake for 20-22 minutes or until a toothpick inserted into the center comes out clean.
