200g minced chicken
1 large grated sweet potato (peeled): Depending on how big your sweet potato you may need 2 small ones.
1 tbs garlic powder
1 tbs onion powder
1/2 tbs paprika
2 tbs coconut oil
2 tbs GF flour: Feel free to use any flour you would like!
2 green onion springs finely chopped
1 tsp salt
How to make sweet potato & chicken nuggets:
Preheat oven to 180 degrees celsius fan forced and line a tray with baking paper. Set aside.
In a large bowl, combine all ingredients together.
Use hands (or table spoon) to shape mixture into nugget shapes and place down on baking paper.
Bake nuggets for 20 - 25mins,flipping them over half-way to make sure both sides are evenly browned.
Allow nuggets to cool for 5 - 10mins before serving.
These burn quickly so make sure you keep an eye on them!
They also taste delicious with guacamole! I make mine with 1/2 an avocado, squeeze of lemon juice, salt and pepper.
They last up to a week in the refrigerator and can be heated in the microwave.
