GF + DF Sweet Potato & Chicken Nuggets

Ingredients:


  • 200g minced chicken

  • 1 large grated sweet potato (peeled): Depending on how big your sweet potato you may need 2 small ones.

  • 1 tbs garlic powder

  • 1 tbs onion powder

  • 1/2 tbs paprika

  • 2 tbs coconut oil

  • 2 tbs GF flour: Feel free to use any flour you would like!

  • 2 green onion springs finely chopped

  • 1 tsp salt



How to make sweet potato & chicken nuggets:


  1. Preheat oven to 180 degrees celsius fan forced and line a tray with baking paper. Set aside.

  2. In a large bowl, combine all ingredients together.

  3. Use hands (or table spoon) to shape mixture into nugget shapes and place down on baking paper.

  4. Bake nuggets for 20 - 25mins,flipping them over half-way to make sure both sides are evenly browned.

  5. Allow nuggets to cool for 5 - 10mins before serving.



Tips:


  • These burn quickly so make sure you keep an eye on them!

  • They also taste delicious with guacamole! I make mine with 1/2 an avocado, squeeze of lemon juice, salt and pepper.

  • They last up to a week in the refrigerator and can be heated in the microwave.
