Protein Hemp and Chia Blueberry Jam

Ingredients:

  • 1 cup frozen blueberries, thawed out.

  • 1 tbsp hemp seeds: I got mine from the Goodness Me Box, and the brand is called Hemp Foods Australia!

  • 1 tbsp chia seeds

  • 1 tbsp liquid sweetener of your choice: I used organic Manuka honey.

  • 1 tsp lemon juice

  • 1 tbsp vegan vanilla protein: I used Happy Way's one.


How to make:

  1. Mash up the blueberries in a small bowl.

  2. Add in the remaining ingredients (expect for the protein powder)

  3. Slowly add in the protein powder ensuring to mix well.

  4. Cover the bowl and place in the fridge overnight or for a minimum of 1 hour.

  5. Once set, transfer to an airtight container and jar. Enjoy!




Tips:

  • There is no need for a thickener such as cornstarch/corn flour as the chia and hemp seeds absorb the moisture.

  • This jam lasts in the fridge for up to 10 days - I do not recommend to freeze.
