GF + DF Vanilla Blueberry Protein Pancakes

Ingredients:

  • 1 and 3/4 cup of GF flour: Or any flour you prefer!

  • 1 scoop vanilla protein (30g): I used Happy Way Vegan Vanilla protein.

  • 2 tbsp coconut sugar

  • 1 egg: Use flax egg to make the recipe vegan!

  • 1/4 tsp salt

  • 1 tsp pure vanilla extract

  • 1 cup vanilla almond milk: Or any nut milk you prefer!

  • 1 cup blueberries

How to make:


  1. Use a large mixing bowl to combine the dry ingredients first.

  2. Add in the wet ingredients.

  3. Fold in the blueberries - be sure not to 'mix' them in otherwise they'll pop and lose their shape.

  4. Cook on a pan with whatever you like on medium to high heat (I used vegan butter)

  5. Both sides are done between 3-5 minutes or golden.


Tips:


  • If you don't have any protein, use 2 cups of flour instead - you'll still get the delicious vanilla taste!

  • They taste amazing with honey or maple syrup.

  • Once made, eat within 30 minutes.
