1 and 3/4 cup of GF flour: Or any flour you prefer!
1 scoop vanilla protein (30g): I used Happy Way Vegan Vanilla protein.
2 tbsp coconut sugar
1 egg: Use flax egg to make the recipe vegan!
1/4 tsp salt
1 tsp pure vanilla extract
1 cup vanilla almond milk: Or any nut milk you prefer!
1 cup blueberries
How to make:
Use a large mixing bowl to combine the dry ingredients first.
Add in the wet ingredients.
Fold in the blueberries - be sure not to 'mix' them in otherwise they'll pop and lose their shape.
Cook on a pan with whatever you like on medium to high heat (I used vegan butter)
Both sides are done between 3-5 minutes or golden.
If you don't have any protein, use 2 cups of flour instead - you'll still get the delicious vanilla taste!
They taste amazing with honey or maple syrup.
Once made, eat within 30 minutes.
