Vegan, GF Choc Cookie Rocky Road

Ingredients:

  • 300g vegan chocolate: I used Loving Earths.

  • 1 cup GF rice krispies

  • 1 chopped vegan cookie: I used Macro Mike's choc chip cookie from my Goodness Me box! Use code 'GENE10' for a discount off your first box!

  • 1 cup chopped vegan marshmallows

  • 3 tbsp coconut oil


How to make:

  1. Line. a brownie tin with baking paper and set aside.

  2. Using a medium bowl, simply melt the vegan chocolate with the coconut oil.

  3. Transfer 1/4 of the chocolate to a seperate bowl.

  4. Add in the rice krispies, marshmallows, and cookie. Fold through until everything is covered in chocolate.

  5. Pour into the lined tin, and smooth out as much as you can.

  6. Pour the remaining chocolate on top.

  7. Set in fridge for 1-2 hours and enjoy!



Tips:

  • Best kept in the fridge, and can last up to a week!

  • Add in as many more toppings as you want!
