For the cookies:
1 and 1/2 cup GF rolled oats
1 cup oat flour: I simply blend 1 cup GF rolled oats to make my own oat flour
1/2 cup and 2 tbsp coconut sugar
1 cup desiccated coconut
1 tsp cinnamon
1 tbsp ground flaxseed
1 cup coconut oil
4 tbsp sugar free maple syrup:
1 tsp baking soda
4 tbsp water
For the filling:
2 tbsp + 1 and 1/2 tsp vegan butter
2 tsp vanilla essence
How to make:
Preheat the oven to 175 degrees celsius and line a baking tray with baking paper.
In a large bowl, stir together oats, oat flour, coconut sugar, coconut, salt and flax.
In a small pan, melt together coconut oil and maple syrup. Remove from heat and stir in baking soda.
Add the maple mixture into the dry mixture, along with water and stir to combine.
Leave for 5-10 minutes to cool slightly, then evenly scoop balls of the mixture onto the baking paper and then flatten slightly.
Bake for 15-20 minutes or until golden brown.
Leave to cool for at least 10 minutes as they will harden when cooled.
While the cookies are cooling, using a small bowl and hand mixer beat together vegan butter and vanilla essence. Slowly add in the powdered sugar, until light and fluffy.
Once the cookies have cooled, simply scoop the filling onto a cookie and squish another on top. Enjoy!
Store in an airtight container in the fridge for up to a week! Do not recommend the filling to be frozen, but the cookies freeze well.
