Vegan & GF Gingerbread Loaf with Cinnamon Frosting


  • 1 ¼ cup hot water

  • ⅓ cup maple syrup

  • 2 cups GF flour: If you're not GF, feel free to use regular flour!

  • 1 tsp bicarb soda

  • ½ tsp baking powder

  • 2 tsp ground ginger

  • 1 ½ tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ¼ tsp ground cloves

  • ¼ tsp salt

  • ⅓ cup avocado oil: Coconut or olive oil will work fine too

  • ½ cup coconut sugar

  • 1 tbsp apple cider vinegar

  • 1 tsp vanilla essence

For the cinnamon frosting:

  • 4 tbsp vegan butter: Room temperature

  • 2 tsp ground cinnamon

  • 2 drops liquid stevia

How to make:

  1. Preheat the oven to 180°C and grease and line a loaf pan with baking paper and cooking spray.

  2. In a small bowl, combine hot water (not boiling but still hot to touch) with the maple syrup and mix to dissolve. Set aside.

  3. In a medium bowl combine the flour, bicarb soda, baking powder, spices and salt and whisk together. In a separate bowl, whisk together the oil, coconut sugar, vinegar and vanilla. Add the dry ingredients to the bowl a little at a time, alternating with the maple syrup and water mixture until the batter just comes together.

  4. Pour the batter into the prepared pan and bake for 40 minutes or until a skewer when inserted comes out clean. Remove from the oven and let cool for 10 minutes in the pan before turning out onto a wire rack to cool completely.

  5. While the loaf is cooling, using an electric handheld mixer, mix together the frosting ingredients until fully combined and fluffy.

  6. Once the loaf is fully cooled, spread the frosting on evenly and add some Christmas sprinkles on top if desired.

  7. Dig in and enjoy!
