Ingredients (for the filling):
8 pitted dates
1/4 cup coconut flour: Can be substituted with almond meal, but the coconut flour gives a more coconut flavour!
1 cup shredded coconut
4 tbsp rice malt syrup: Can be substituted for honey, or another sticky sweetener.
3 tbsp coconut oil
2 tbsp cashew butter: Can be substituted for almond or peanut butter.
1 tbsp matcha powder: I got my powder from the GoodnessMe Box Shop! It is from the brand Nutra Organics.
1 tbsp of coconut vanilla collagen powder: I use Dose and Co's dairy free one!
For the coating:
1 cup vegan white chocolate: I use Loving Earth's one!
2 tbsp coconut oil
1/2 tsp matcha powder
How to make:
Using a food processor, blend all the filling ingredients together!
Roll the mixture into balls (should make about 12) and place in the freezer to set.
Either using a stove or microwave, mix together the white choc and coconut oil.
Separate a little bit of the white chocolate into another bowl and mix through the matcha powder.
Using a fork, dip the balls into the white choc only bowl. Set in the fridge for about 5 mins.
Then using a teaspoon drizzle the matcha chocolate over each ball.
Set in the fridge again for a further 3 minutes. Enjoy!
Make sure the first white chocolate layer is set before drizzling the matcha chocolate!
